Traditional Moroccan Harira Recipe (Serves 6)
Ingredients
- 250 g beef or lamb, cut into small cubes
- 1 large onion, finely chopped
- 2 grated tomatoes or 400 g blended tomatoes
- ½ cup chickpeas, soaked overnight
- ¼ cup lentils, rinsed
- 1 handful fresh cilantro, chopped
- 1 handful fresh parsley, chopped
- 2 celery stalks, finely chopped
- 2 tablespoons tomato paste
- 2 tablespoons vegetable oil
- 1 teaspoon ground ginger
- ½ teaspoon ground turmeric
- ½ teaspoon black pepper
- Salt to taste
- 1.5–2 liters of water
Thickening Mixture
- 4 tablespoons all-purpose flour
- 1 cup cold water (mix with the flour until smooth and lump-free)
Instructions
- Heat the oil in a large pot and sauté the onion with the meat until lightly browned.
- Add the spices, celery, cilantro, parsley, grated tomatoes, and tomato paste. Cook for about 5 minutes.
- Add the chickpeas, lentils, and water. Simmer for 45–60 minutes, or until the meat and chickpeas are tender.
- Gradually pour in the flour mixture while stirring continuously to prevent lumps.
- Let the soup simmer for another 10–15 minutes until it reaches a rich, thick consistency.
- If desired, add a handful of fine vermicelli during the last 5 minutes of cooking.
Serve hot with dates, Moroccan chebakia, or fresh Moroccan bread.
