Traditional Moroccan Harira Recipe (Serves 6)

Ingredients

  • 250 g beef or lamb, cut into small cubes
  • 1 large onion, finely chopped
  • 2 grated tomatoes or 400 g blended tomatoes
  • ½ cup chickpeas, soaked overnight
  • ¼ cup lentils, rinsed
  • 1 handful fresh cilantro, chopped
  • 1 handful fresh parsley, chopped
  • 2 celery stalks, finely chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground ginger
  • ½ teaspoon ground turmeric
  • ½ teaspoon black pepper
  • Salt to taste
  • 1.5–2 liters of water

Thickening Mixture

  • 4 tablespoons all-purpose flour
  • 1 cup cold water (mix with the flour until smooth and lump-free)

Instructions

  1. Heat the oil in a large pot and sauté the onion with the meat until lightly browned.
  2. Add the spices, celery, cilantro, parsley, grated tomatoes, and tomato paste. Cook for about 5 minutes.
  3. Add the chickpeas, lentils, and water. Simmer for 45–60 minutes, or until the meat and chickpeas are tender.
  4. Gradually pour in the flour mixture while stirring continuously to prevent lumps.
  5. Let the soup simmer for another 10–15 minutes until it reaches a rich, thick consistency.
  6. If desired, add a handful of fine vermicelli during the last 5 minutes of cooking.

Serve hot with dates, Moroccan chebakia, or fresh Moroccan bread.
